Shrimp Ceviche

Known in Spanish as Ceviche de Camarones, this shrimp dish is very popular on the Atlantic and Pacific coasts of Colombia as well as in Ecuador.

Ingredients

Preparation

Steam shrimps until pink, do not overcook. Pat the shrimp dry and place them in a large glass bowl.

Add the ketchup, lime juice, onion, cilantro, chopped tomato, Tabasco sauce, olive oil, garlic, salt, and pepper to taste.

Stir to combine all ingredients and serve cold with Ritz crackers.

Refrigerate it until it's time to serve.

Editor Notes

If you prefer not to cook the shrimp, you can buy freshly cooked shrimp from your local seafood store. I don't recommend using frozen shrimp as it will make for a soggy ceviche.
